There is a very convenient feature built in to Outlook 2003, Outlook 2007, Outlook 2010 called " Email Address Auto Complete ". This feature gives you the ability to enter the first letter or 2 of a users name and select the address you'd like via a drop-down.

Seen here:

This tool is pretty cool, but you will most likely find yourself having to remove e-mail addresses as people change theirs, change jobs, etc.

Suggestion #1:
To delete a particular cached email address from the list you do the following:
  1. Open a new message, type the email address you wish to clear from cache until it appears like in the image above.
  2. Press the down arrow key, highlight the address you'd like to delete, and press the delete key.
  3. Finished ! That entry will now no longer be in your Outlook Auto Complete Cache.

Suggestion #2:
IMPORTANT NOTE: This will delete ALL addresses stored in cache so either use with caution or only when you'd like to delete ALL addresses
